Two New Recipes :)

So, with a baby, grad school work, trying to start working out more, and everything else we have to do, we have decided that at least once a week we will have a crockpot meal.  Thanks to Pintrest, here are two recipes we tried.. and they were great!

#1- Italian Crockpot Chicken
Place 1 or 2 chicken breasts (we only used 1 and it was enough for two people) in the crockpot.  We used frozen chicken, but you can use either frozen or thawed.  In a bowl, mix together 1 package of softened cream cheese, 1 can of cream of chicken soup, and 1 package of italian dressing seasoning.  Pour the mixture over the chicken in the crockpot, and cook on high for 4-6 hours (or until the chicken is cooked all the way).  Then, you can shred the chicken mixture and pour it over rice or pasta (which is what we used, and it was great!).


#2- Crockpot Bacon and Tater Tot Breakfast
Layer ingredients in the following order: 1/3 bag of tater tots, onions (chopped), green peppers (chopped), and cheeses (cheddar and parmesan (optional).  Repeat layers two more times ending with cheese.  Combine 6 eggs, 1/2 cup milk, and 2 tablespoons flour in a separate bowl.  Season with salt and pepper.  Pour the mixture over the layers in the crockpot.  Cook on low for 10-12 hours.  We cooked our bacon and then added it to our dish, but you can put the bacon right in the crockpot if you like (just combine in the layers).  You can use as much cheese as you'd like also.
